My friends Kristi and Mark wanted individual desserts for their wedding. I invested in 2″ cheesecake pans and made mocha cheesecakes, classic new york cheesecakes, and lemon tartlets with fresh fruit. It was a ton of work but they turned out so well, and everyone was happy! I’d do it again in a heartbeat.
